4salmon filletsabout 150g each
2zucchinisliced thin
250gcherry tomatoeshalved
100gblack olivespitted

Instructions
Preheat the oven to 180°C (350°F).
Cut 4 sheets of parchment paper approximately 30x40 cm and fold each in half.
Place sliced zucchini on one side of each sheet to create a vegetable base.
Add cherry tomatoes, olives and minced garlic over the zucchini.
Place a salmon fillet on top of the vegetables. Season with salt, pepper, thyme and drizzle with olive oil. Add lemon slices on top.
Fold the parchment paper over and seal the edges tightly to form airtight packets.
Place the papillotes on a baking tray and bake for 15 minutes until the salmon is cooked and tender.
Notes
You can customize the vegetables depending on the season. Make sure the papillote is sealed well to trap steam and keep the salmon moist.
